This is how I make the perfect artichoke with aioli 💚 recipe below while my new website gets finished up (yay!)

Ingredients: 2 large artichokes, 2 tablespoons olive oil, grated zest of 1 lemon, 2 small garlic cloves, grated, ½ teaspoon kosher salt, freshly ground black pepper, 1 egg yolk, 1 tablespoon lemon juice, 1 small garlic clove, grated, ¾ cup algae oil
Instructions: Trim the stems off the artichokes and remove the tough outer leaves. Cut off the top third of each artichoke. Peel the stems lightly with a vegetable peeler, then slice each artichoke in half lengthwise. Place the halves cut-side down in a steamer basket over boiling water. Cover and steam until the stems are fork-tender, 20 to 30 minutes.
Whisk together the olive oil, lemon zest, garlic, salt, and a few grinds of pepper in a small bowl. Set aside.
Whisk the egg yolk, lemon juice, grated garlic, and a pinch of salt together in another small bowl. Drizzle in the algae oil very slowly at first, whisking constantly, then more steadily as it thickens into something glossy and spoonable. Season with salt.
Brush the steamed artichokes generously with the lemon garlic oil and place cut-side up on a foil-lined baking sheet. Broil 6 inches from the heat until crisped and golden, 3 to 5 minutes.
Serve warm with the aioli for dipping.
