So many of us are looking for easy streamlined meals that are delicious and easy to get on the table.  My cookbook, You Got This! includes many recipes that are just perfect for exactly that.  And this recipe hits both those notes as well.  My husband ate something like this almost everyday when we were in Greece recently. He never tires of it. 
Tender fall off the bone chicken paired with roasted potatoes that cook in this lovely citrus marinade will have everyone wanting seconds.

Baked Greek Chicken with Lemon Potatoes

I was inspired by christinadynamite  for this version. I’ve made this many times before but never using orange juice and I LOVED this idea 👏 🍊 

8 bone-in, skin-on chicken thighs 
2 lbs baby Yukon potatoes, halved 
Juice of one lemon 
Juice of one orange 
2 tbls yellow mustard 
1/4 cup olive oil / divided 
2 cloves garlic, chopped 
Dry oregano 
5 sprigs fresh oregano 
Salt and pepper to taste 

Preheat oven to 400F
Combine potatoes in a bowl with 2 tbls olive oil, 1 tsp oregano, 1 tsp salt and 1/2 tsp pepper and garlic. Stir to combine.  Set aside. 

Whisk lemon juice, orange juice, mustard, 1/2 tsp dry oregano, pinch of salt and pepper. Set aside. 
Arrange thighs in a roasting pan large enough to hold the potatoes as well. Season with salt, pepper and a healthy sprinkling of dry oregano. Arrange the potatoes around the chicken.  Pour the marinade over the chicken.  Place the oregano sprigs on top. Cover tightly with foil and bake for one hour. Remove the foil and bake for 30 minutes more.  If you want it extra crispy, broil it for a few minutes.
