french onion mac and cheese 🧅🧀 recipe below… Ingredients:  1 lb fusiloni   Onions: ~10-12 onions, sliced should be overflowing in a large pot  2 cloves garlic, chopped  3 sprigs thyme  1 bay leaf  1 tsp EVOO  1/4 cup cognac  1/2 -1 cup beef stock  1 tsp salt  1/2 tsp black pepper  Cheese sauce:  1 block gruyere, shredded 1 block Colby jack, shredded 2 block sharp white cheddar, shredded  1 block monetary jack, shredded  (Reserve cheese to top Mac) 3 tbsp salted butter  1/2 tsp of each:  Salt, pepper, onion and garlic powder, cayenne, paprika (salt to taste once sauce is done) 1 tsp dijon  3 tbsp flour  ~1-1 1/2 cups whole milk  Chives to garnish  Let’s get into it:  Begin by adding EVOO to a large pot, add sliced onions, cook low and slow stirring occasionally.  In a separate sauce pan, add butter and seasonings, cook until fragrant (2 minutes) then add in flour.  Cook for about 3 minutes, add milk slowly while whisking. Roux will being to thicken and continue to stream in milk while whisking.   Slowly sprinkle in cheese, while whisking, one handful at a time until each batch of cheese is melted.  Once smooth, add Dijon, taste and season accordingly.  Return to the onions, once soft, create a well and add the garlic, cook till fragrant. Add in salt pepper and thyme and return to the stove to cook.  When the onions resemble a jam and are a deep brown color, add flour and cook (2 min)  Deglaze with cognac ( cook down the alcohol for a few min) and scrap the brown bits from the bottom of the pan. Add in beef stock and bay leaf and let simmer on the stove till thick and rich, you may need to add more stock, just keep an eye on it and add accordingly.  Add your pasta to heavily salted water, be sure to undercook 2-3 minutes as the pasta will continue to cook when it bakes.  Combine the pasta with the sauce and onions and stir till well combine.  Add to a baking dish, only halfway, then layer on more cheese and onions, fill with the rest of the pasta and repeat, topping with a HEAVY layer of cheese.  Bake at 350 for 30ish minutes, until golden on top and bubbling around the edges, if you need to broil for a few minutes just make sure to WATCH IT, you’ve come so far, don’t let it burn!
