mini holiday series pt 1: salt bread 🧂🧈recipe below...  #saltbread #thanksgiving #fyp #food #cooking  recipe by @erinscozykitchen  Ingredients: 400 g bread flour 120 g cake flour 365 g water (ice water) - to keep the dough from getting too warm 26 g sugar 10 g salt 30 g non-fat milk powder 40 g cold unsalted butter, straight from fridge (if you have been having a hard time with your dough being too sticky even after following all the instructions, try using 30 g of butter instead) 7 g instant dry yeast 12 × 15 g butter chunks (I cut 1 stick of butter into 8 pieces so you'll need around 1.5 stick of butter) pretzel salt Let's get into it: Begin by mixing bread, flour cake, flour, sugar, salt, milk, powder, yeast, and cold water in a stand mixer with a dough hook on low speed. Once the dough starts to form, add the unsalted butter (cold) and increase the speed to medium. Knead the dough for quite a bit, I went for about 16 minutes, but depending on your mixer you might need to do more or less. (Knead the dough until it passes the window pane test) Shape the dough into a taut ball, place it in a bowl, cover and let it double in size. Punch out the dough, turn it out and weigh out 80gram pieces, shape into little balls and let them rise for 15 Shape each ball into a teardrop shape, starting at the bottom roll them out. You want the top to be slightly larger than the bottom. Slightly pull as you roll, and place a piece of butter on the top of the dough, roll the dough starting at the top slightly pulling as you roll down. Rest the dough balls with the seam side down, cover and let rise. Pre heat oven to 450, brush/ spray the dough with water then sprinkle the tops with salt Spray a few more times with water and add to oven, bake for ~15 min or under tops are golden and the bottom is crispy (pro tip, brush the tops with some of the excess butter while cooking for more
