Well be grilling out this weekend while watching the March Madness Sweet 16. And I’ll be making a big batch of this. This is one of my favorite things to make for a gathering because it’s easy to make ahead of time (actually gets better as it sits) it’s cost effective and easy to switch up based on what you have. It’s also super easy to make more salad by simply adding a couple more cans of beans. For this salad I combined 5 cans of different beans (literally whatever I had), with some green beans (I used fresh beans that I blanched, but you can use frozen and thawed) , lots of chopped veggies (I chopped up red pepper, red onion, celery and cucumber), fresh herbs, about 3 tbls (I used parsley and dill but feel free to use whatever you have) 2 tbls of capers and a tangy vinaigrette. Refreshing, light and so delicious, it’s perfect on its own or as a side to any grilled protein.

**This salad will keep in an airtight container in the fridge up to 4 days.

Simple Vinaigrette
(This will make more than you need but it’ll last up to a week in the fridge)
 1/2 cup red wine vinegar
1/2 cup extra-virgin olive oil
2 tsp Dijon mustard
1 tbls honey
1 tsp kosher salt
1/2 tsp black pepper

Add all ingredients to a jar with a lid and shake well until everything is mixed. Check for seasoning.
