Houston health officials investigated #MamaTina’s Gumbo at the Houston Livestock Show & Rodeo after a customer reported becoming seriously ill after eating the dish.

According to records obtained by kprc2, the customer experienced symptoms including vomiting, chills, nausea, fever, and reported “throwing up blood” after eating at #TinaKnowles’ booth.

On March 16, inspectors found the gumbo had been prepared off-site at an unlicensed location, cooled and stored in non-food-grade containers, then transported to the rodeo without proper temperature logs. The product was later kept in a refrigerated trailer to thaw before being served.

During the inspection, officials also observed shrimp and crab labeled “keep frozen” that had thawed. Due to multiple violations, including improper storage, lack of temperature documentation, and unapproved food sourcing, all prepared gumbo was discarded.
