This 1 week visit to kansascity  is all about #craftmanship 

To the home cook, a #knife is often just a tool for slicing and dicing, but in the #professional kitchen, it’s an extension of the chef’s hand. That’s why I’m pursuing a professional knife repair and #sharpening certificate—it’s about more than just a sharp edge. 

The knives I use professionally are vastly different from those found in a typical kitchen. They can be incredibly expensive and are made from #specialized steels, each with unique properties. To properly care for these high-performance tools, I must understand the #science behind them, including the #metallurgy of different alloys.

Repairing a professional knife isn’t a simple sharpening job. It’s a complex process that involves re-profiling the blade, recreating the primary and secondary #bevels , and setting the final edge using a combination of precision machines and whetstones. Every step requires a deep understanding of the blade’s #geometry and its intended use. 

Different knives are designed for specific tasks, and the angle of the edge, as well as the consistency of the sharpening, directly impacts the quality of the final product.
