This is, quite possibly, the best restaurant in the world right now: the place where culinary research comes closest to scientific inquiry—complete with a dedicated research center, Spora, and scientific publications in which the chef himself takes part; where the visual language of the dishes and the lighting are pursued with obsessive care; where the experience approaches a total artwork; where drinking is not mere pairing but a field of research in its own right, supported by a substantial, specialized team; where the precision of technical execution is unmatched; where the service’s command is startling; where the culinary sublime and a razor-edged irony appear in forms that are almost unsettling—and all the more sublime for it. Alchemist is the triumph of exteriority-as-violence and violence-as-exteriority: wholly inside, and wholly outside, the contemporary moment
