## Caption

Mutton biryani 🤗

Ingredients:
- 500 grams of zeera rice (jeera rice)
- 500 grams of mutton, cut into pieces
- 2 large onions, thinly sliced
- 2 tomatoes, chopped
- 2 tablespoons of ginger-garlic paste
- A handful of mint leaves, chopped
- A handful of coriander leaves, chopped
- 4 tablespoons of ghee
- 1/2 cup of plain yogurt
- 2 teaspoons of chili powder
- 2-3 green chilies, sliced
- Salt to taste

Instructions:
1. Wash the zeera rice thoroughly and soak it in water for about 30 minutes. Drain the water and set aside.
2. In a large cooking pot, heat 2 tablespoons of ghee and fry the thinly sliced onions until they turn golden brown. Remove half of the fried onions and set them aside for garnishing.
3. To the remaining fried onions in the pot, add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
4. Add the chopped tomatoes and cook until they are softened.
5. Now, add the mutton pieces to the pot and cook them until they are browned on all sides.
6. Add the chopped mint leaves, coriander leaves, green chilies, chili powder, and salt to the pot. Mix well and cook for a few minutes.
7. Add the yogurt to the pot and mix it with the mutton and spices. Cook for another few minutes until the yogurt is well incorporated.
8. Add 4 cups of water to the pot and bring it to a boil. Once boiling, add the soaked and drained zeera rice. Cook the rice until it is about 70% done (slightly undercooked). Drain the rice and set it aside.
9. In a separate pan, heat 2 tablespoons of ghee and add a layer of partially cooked rice followed by a layer of mutton. Repeat the layers until all the rice and mutton are used.
10. Cover the pan with a tight-fitting lid and cook on low heat for about 20-25 minutes to allow the flavors to meld together and the rice to finish cooking through.
11. Finally, garnish the biryani with the reserved fried onions. Serve hot and enjoy the flavorful Bangalore-style Muslim shadi ki biryani!
