Quick recipe for Upma…

Ingredients:
- Semolina (rava or sooji): 1/2 cup
- Water: 1 cup
- Oil or ghee: 1 tablespoon
- Mustard seeds: 1/2 teaspoon
- Urad dal (split black gram): 1 teaspoon
- Chana dal (split chickpeas): 1 teaspoon
- Curry leaves: 4-5 leaves
- Green chilies: 1, finely chopped
- Onion: 1 small, finely chopped
- Ginger: 1/2 teaspoon, grated
- Mixed vegetables (such as peas, carrots, capsicum, etc.): 50 grams, finely chopped
- Salt to taste
- Fresh coriander leaves for garnishing (optional)
- Lemon juice (optional)

Instructions:
1. Heat oil or ghee in a pan or kadai over medium heat.
2. Add mustard seeds and let them splutter.
3. Add urad dal and chana dal. Sauté until they turn golden brown.
4. Add curry leaves, finely chopped green chilies, and grated ginger. Sauté for a minute until aromatic.
5. Add finely chopped onion and cook until it becomes translucent.
6. Add the mixed vegetables (50 grams) and sauté for a couple of minutes until they are slightly cooked.
7. Add semolina (rava) to the pan and roast it on low heat for about 3-4 minutes until it turns light golden and gives off a roasted aroma.
8. Meanwhile, heat water in a separate saucepan.
9. Slowly pour the hot water into the pan with roasted semolina while stirring continuously to avoid lumps.
10. Mix well and add salt to taste.
11. Cover the pan with a lid and cook the Upma on low heat for about 4-5 minutes until the semolina absorbs the water and becomes soft and fluffy. Stir occasionally to prevent sticking.
12. Remove from heat and let it rest for a minute.
13. Garnish with fresh coriander leaves and a squeeze of lemon juice if desired.
14. Serve hot as a breakfast or snack.
