Part 2 of my mum’s Chicken & Prawn Breyani 🍗🍤🍚

Yesterday we shared Part 1: the chicken marinade, and today we’re finishing this incredible breyani. This recipe is so special to our family, and honestly it’s one of the most comforting meals my mum makes. The layers of chicken, prawns, potatoes, caramelised onions, herbs and rice make this dish absolutely unforgettable.

Here’s Part 2: how we cook and assemble the breyani.

Ingredients

Marinated chicken (from Part 1)
3–4 potatoes, boiled and cut into wedges
Egg yellow (for coating potatoes)
Oil for frying
1 tomato, chopped
1 cup pre-boiled black lentils
2 large onions, sliced
2–3 chillies
A few curry leaves
2-3 cups parboiled basmati rice
Egg yellow (for colour in the rice)
300–400 g prawns, cleaned
Salt and cayenne pepper (to season prawns)
Fresh mint
Fresh coriander

Method

Spread the marinated chicken into a large pot and allow it to cook and brown.

Meanwhile, coat the boiled potato wedges with a little egg yellow and fry them in oil until golden and crispy on all sides. Remove and set aside.

Once the chicken has browned, add the chopped tomato and pre-boiled black lentils.

In the same oil used for the potatoes, fry lots of sliced onions, green chillies, red chillies and curry leaves until the onions become deep golden and caramelised.

Add the parboiled basmati rice to the chicken pot and mix gently. Add a little egg yellow for beautiful colour.

Remove the caramelised onions from the oil.

In that same oil, quickly fry the prawns, seasoned with salt and cayenne pepper, for a couple of minutes until just cooked.

Add the prawns, crispy potatoes, caramelised onions, fresh mint and coriander to the pot.

Allow everything to finish cooking together until the breyani is fragrant and ready to serve.

We love serving this with dal, but it’s also delicious with a sour milk sauce and a carrot salad on the side.
