You guys… this is going to be the last recipe I’ll be sharing with my mom for a while 😢😭 But don’t worry — we’re ending it with a good one.

This is her Chicken Breyani, and trust me when I say it’s better than any recipe you’ll find on Google.

This whole reel series has been really special to me because the entire family got involved, and that made it even more meaningful ❤️

So here’s Part 1: Marinating the Chicken 🌶️

Chicken Breyani – Part 1: Marinade

Ingredients
• 2 kg chicken pieces 
• 2 tsp coriander seeds 
• 2 tsp cumin seeds (jeera) 
• 2 star anise 
• 2 bay leaves 
• 2 small cinnamon sticks 
• 6–8 green cardamom pods 
• 8–10 cloves 

Ground spices
• 2 tsp cumin powder 
• 2 tsp garam masala 
• 2 tsp coriander powder 
• 1 tsp turmeric 
• 4 tsp salt 
• 4 tsp Kashmiri chilli powder 

Other
• 4 tsp ginger & garlic paste 
• 1½ cups amasi 
(You can substitute with plain yogurt, or milk with a squeeze of lemon juice)

Method
Add the chicken to a large bowl. Add all the whole spices, ground spices, ginger & garlic paste, and the amasi. Mix everything well so the chicken is fully coated. Cover and marinate for a couple of hours, or ideally overnight for the best flavour.
