My Mum’s Crab Curry 🦀
A slow, fragrant crab curry made the way I grew up eating it — full of spice, tang, and love.

Ingredients:
1 onion, sliced
5 garlic cloves, crushed
1 thumb-sized piece of ginger, finely chopped
6 green chillies, slit lengthwise
Coriander stems, finely sliced
Curry leaves
Thyme 
Oil

Whole spices:
½ tsp turmeric
½ tsp mustard seeds
1 tsp coriander seeds
4 cloves

Ground spices:
3 heaped tbsp Bombay masala
1 tsp turmeric
1 tsp salt
1 tsp dhania (coriander powder)
1 tsp jeera (cumin powder)

Blended tomatoes
Tamarind concentrate (to taste)
Coconut milk
Fresh crab
Fresh coriander, to finish

Method:
Heat oil in a pan and sauté the onion, garlic, ginger, coriander stems and green chillies with curry leaves until fragrant.
Add the whole spices and cook until the mustard seeds begin to pop.
Stir in the ground spices and cook gently until aromatic.
Add the blended tomatoes, cook well, then add tamarind and allow the colour to deepen.
Once the oil separates, stir in the coconut milk.
Add the crab, mix gently, cover and cook for about 20 minutes until the shells turn bright.
Finish generously with fresh coriander and serve hot.
