The ultimate finale to a summer braai! If you’ve never grilled fruit over open coals, this is your sign to start. We are taking slightly underripe peaches, charring them with sweet honey butter until warm and caramelised, and topping them with a velvety, chilled honey mascarpone cream. Finished with crisp biscuit crumbs for crunch and a pop of balsamic pearls for that perfect acidic contrast!

How to make it:
1️⃣ Halve your peaches and grill them over medium coals, adding dollops of honey butter so they get gloriously sticky and caramelised.
2️⃣ Whisk together mascarpone, yoghurt, and raw honey until smooth, then chill briefly.
3️⃣ Plate up the warm peaches, add a dollop of the cold cream, and drop a few balsamic pearls on top.
4️⃣ Finish with a generous sprinkle of crushed amaretti or shortbread biscuits and fresh mint!
