The perfect Christmas side — Creamy Vegetable Gratin with Pistachio Crumb 🎄- it’s colourful, comforting, and topped with a crunchy pistachio parmesan crumb.
Golden, bubbly, and ready for the Christmas table ✨

Ingredients
600 g potatoes, thinly sliced
400 g sweet potato, thinly sliced
300 g beetroot, thinly sliced
Cream Sauce
120 g sour cream
120 ml cream
2 garlic cloves, grated
1 tsp fresh thyme
1 tsp salt
100 g Gruyère, grated
Pistachio Crumb
50 g pistachios
55 g breadcrumbs
50 g parmesan

Method
Arrange vegetables in a baking dish.
Mix cream sauce, stir in Gruyère, pour over.
Blitz crumb, sprinkle on top.
Bake at 180°C for 45–50 min until golden.
