Slow-cooked with cinnamon, cardamom, potatoes, and just a touch of apricot jam for that perfect sweet–spicy balance — this dish tells a story with every bite. 🌍🥘

📝 Cape Malay Chicken Curry

Ingredients
	•	2 tbsp oil
	•	2 onions, sliced
	•	1 cinnamon stick
	•	3 cardamom pods
	•	1-2 green chillies
	•	2 tbsp ginger–garlic paste
	•	2 tomatoes, blended
	•	2 tsp curry powder
	•	1 tsp turmeric
	•	1 tsp ground coriander
	•	1 tsp ground cumin
	•	1 kg chicken pieces (bone-in works best)
	•	3 medium potatoes, quartered
	•	500 ml chicken stock
	•	1 tbsp apricot jam
	•	Salt, to taste
	•	Fresh coriander, to garnish

Method
1️⃣ Heat the oil and fry the onions until golden brown.
2️⃣ Add the cinnamon and cardamom; fry until fragrant.
3️⃣ Stir in the green chilli, ginger–garlic paste, and tomatoes. Cook until thickened.
4️⃣ Add the spices, then the chicken. Stir until well coated.
5️⃣ Add the potatoes and stock. Cover and simmer gently for 1 hour, until the chicken is tender and the potatoes are soft.
6️⃣ Stir through the apricot jam just before serving.
7️⃣ Garnish with fresh coriander and serve with roti or geelrys. 🌿🍚
