Simple Turkey Dry Brine:

3TBS Course Sea Salt
1 TBS Baking Powder (aluminum free)
1 tsp brown sugar

In a bowl, combine the dry ingredients and mix. Rub the brine mixture onto the turkey until evenly coated. Place turkey on a roasting pan with a rack or a sheet pan with a wire rack. This will help dry the skin for that coveted extra crispy skin. Put in refrigerator uncovered for at least 24-48 hrs. The day of the cook, remove turkey from the refrigerator and rub off any excess brine with a paper towel.

Next season the turkey..

Dry rub:
.
1/2 tsp onion powder
1Tbs of chicken bouillon powder
1/4 tsp black pepper
1 tsp paprika
1/2 tsp dried oregano
1/2 tsp garlic powder
2tsp of thyme
2tsp of dried Rosemary 
 .
In a bowl, combine dry ingredients and mix. Spray a light coat of olive oil at act as a binder for the rub. Coat the turkey with dry rub mix don’t forget to include rub under the skin over the breast area. Stabilize your smoker to about 225-250° and place turkey in the smoker. I personally like fruity woods to smoke with my poultry so I recommend apple, pecan or cherrywood.  After one hour, it's now time to raise the smoker temperature to 350º to start roasting the turkey. Remove the turkey from the smoker once the internal temperature of the breast reaches 155°. The legs and thighs should be temping around 165º. Rest the turkey for at least 15-30min. The residual heat inside the turkey should push your turkey to the ideal internal temperature of 165° in the breast.  Carve and enjoy.
