## Caption

The dish in the set is one I made at home.  And my favorite way to eat Uni.  Fresh corn tempura,  Uni, and Ikura over white rice.  And drizzled lightly with a sweet soy and sesame oil sauce. 

Uni, sea urchin is special.  It MUST be eaten fresh!  And the must be caught in clean ocean waters.  Like oysters, waters the Uni is grown in will affect it's flavor.

I did not like this sea porcupine before living in Japan.  It may be different now, but the Uni that is imported to the US is not so great.  And many Uni in the west coast is from the Gulf of Mexico.  Where the water quality has deteriorated over the years due to over fishing and human pollution. 

It should taste like a sweet, creamy, clean ocean.  If you don't trust me, westcott can verify this with his first bite of Uni ever. (You can also watch the whole experience on his YT channel) 

* fun fact.  What youre eating is actually the reproductive organ of the sea urchin*  enjoy🤣
