Lemon Courgette Salad

Shopping & Ingredients List:
450g Courgette, in thin ribbons 1 Medium Tomatoes, chopped 2 Radishes, sliced
2 tbsp Pine Nuts
1 tbsp Poppy Seeds
2 tbsp Sesame Seeds
100g tin White Beans, 
drained 28g Rocket

Dressing
1 tbsp Lemon Juice
2 Garlic Cloves, crushed
1 tbsp Olive Oil

Method
1. In a jar shake together all the dressing ingredients.
2. Assemble courgette, tomato, radishes, salad leaves in a bowl. Sprinkle over nuts & seeds. Drizzle over dressing. Serve immediately.
