we’ve been chasing precision lately. not louder, not bigger… just sharper. every layer intentional, every texture doing its job. this is what that looks like right now at ethos:

a chicken liver tart cut like a jewel 💎 balanced with bright rhubarb gel and finished with a fresh parsley dust that lifts the richness

heirloom tomatoes and burrata 🍅 soft, creamy, perfectly seasoned. olive oil, salt, and just enough restraint to let the ingredients speak

a single seared scallop 🐚 deeply caramelized, resting in brown butter with toasted hazelnuts. rich, delicate, and just barely sweet
