These Vegetable Fritters are a showstopper! Such a great idea for an appetizer at your next get together 💫

This recipe is from Rosie Daykin’s book, “The Side Gardener” which can be found in our store! 👩‍🌾

INGREDIENTS
1 teaspoon cumin seed, toasted and crushed
1 teaspoon coriander seed, toasted and crushed
2 cups/250 g grated zucchini
¾ cup/85 g self-rising flour
½ teaspoon salt
1½ cups/75 g grated carrot
1 tablespoon finely chopped chives
1 tablespoon finely chopped fresh dill
1 tablespoon finely chopped fresh mint
⅓/ cup/80 ml buttermilk
1 large egg
Vegetable oil for frying
1 cup/250 ml Greek-style plain yogurt
2 teaspoons curry powder
1 small handful fresh mint leaves, finely chopped

TO MAKE
In a small frying pan over medium-high heat, toast the cumin and coriander seeds until they begin to brown and are fragrant. Transfer the seeds to a mortar and pestle to finely crush.

Place the grated zucchini in a piece of cheesecloth, twist it tightly, and give a good squeeze to remove as much liquid as possible.
In a large mixing bowl, combine the flour, salt, toasted seeds, grated carrot, zucchini, and chopped herbs. Stir to combine and evenly coat the vegetables.

In a small bowl, whisk together the buttermilk and egg. Add liquid to the vegetable mixture and stir to combine.

Place a large frying pan filled with 1 inch/2.5 cm of vegetable oil over medium-high heat until the oil reaches 370°F/190°C on a deep-fry thermometer. Very carefully drop heaping tablespoons of batter into the hot oil, making sure to be gentle to prevent any splashing.
Let the fritters cook until browned on the bottom, 2 to 3 minutes. Flip each fritter over using a spatula and repeat on the other side for 2 to 3 minutes more.

Carefully remove the fritters from the oil and transfer to a plate lined with paper towel to drain. Repeat with the balance of the batter (you can keep the fritters warm in a low oven, 225°F/105°C while finishing up).

TO MAKE THE CURRIED YOGURT
Place the yogurt, curry powder, and chopped mint in a small bowl and stir to combine
