*Chicken Aloo Bolani* 🫓

Ingredients
	•	Uncooked tortillas
	•	3–4 medium potatoes (boiled & mashed)
	•	3–4 cups chicken breast (boiled & shredded)
	•	1 tbsp salt
	•	1 tbsp red pepper powder
	•	1 tbsp black pepper
	•	1 tbsp coriander powder
	•	1 tbsp cumin powder
	•	1 tbsp melted butter
	•	1 tbsp crushed red pepper (adjust to taste)
	•	1 tbsp chicken powder (optional)
	•	1 medium onion (finely chopped)
	•	2 cups fresh cilantro (finely chopped)
	•	1 cup green onions (finely chopped)

Method
	1.	In a large bowl, combine the mashed potatoes, shredded chicken, salt, red pepper, black pepper, coriander powder, cumin powder, melted butter, crushed red pepper, chicken powder (if using), onion, cilantro, and green onions. Mix well until evenly combined.
	2.	Place a layer of the filling on one tortilla. Moisten the edges with water and press down with a fork to seal another layer on top. 
	3.	Heat a pan over medium heat with 1 tbsp of oil. Cook the bolani on both sides until golden brown and crispy.
	4.	Serve hot with chutney.

Tip: If you prefer a milder filling for kids, reduce the crushed red pepper in the main mixture and sprinkle extra on your own portions before cooking.
