Minneapolis-based coffee chain Caribou Coffee has set its sights on expanding into New York State, and its plan includes opening at least two shops on Long Island.

Caribou intends to take over a space formerly occupied by Starbucks and has already submitted a proposal to demolish two existing properties to construct a brand-new location.
