## Caption

I made a Durban bunny chow… but with Vietnamese bánh mì 🇿🇦🌏 Not traditional — but when you’re a South African chef abroad, you make a plan 😅

Crispy bread, rich spicy curry, fresh sambal… 
all in one bite.

500 g chicken (boneless is best for this recipe) 
2 tbsp oil
1 large onion (sliced) 
1 tbsp ginger 
1 tbsp garlic
0,5 tsp turmeric (fresh) or
1 tsp ground turmeric
2 tbsp Durban masala
1 tsp turmeric
Salt to taste
2 tomatoes (chopped)
2 medium potatoes (cubed)
1–1.5 cups water
Fresh coriander

1. Build the base
Heat oil → add onions
Cook until soft and lightly golden

2. Add aromatics
Add ginger + garlic
Cook until fragrant

3. Add spices
Add Durban masala + turmeric.
Cook for 30 seconds. 

4. Add chicken
+ salt
Mix well and let it brown slightly

5. Add tomatoes
Cook until soft and slightly thick

6. Add potatoes + water
Mix well

7. Simmer
Cover and cook for 25–35 minutes
Until chicken is tender and potatoes are soft

8. Finish
Garnish with fresh coriander

🥖 TO MAKE YOUR “BUNNY MÌ”
	•	Slice open bánh mì
	•	Hollow slightly
	•	Fill with curry
	•	Top with carrot sambal
	•	Garnish with coriander
