🐣 I’ve been on a bit of a lemon kick lately and wanted to make a lemon poppyseed sweet treat for Easter brunch. I asked y’all which you’d rather see: lemon poppyseed muffins or pancakes, and the majority chose muffins (lowkey my first choice).

🌷 These lemon poppyseed muffins with a lemon curd glaze are the perfect addition to your Easter brunch. They are light, fluffy, and bursting with bright citrus flavor.

🍋 Here’s what you need to try this at home:

2 1/2 cups all-purpose flour
2 tbsp poppyseed
1 tsp cardamom
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 cup vegetable oil
1 cup granulated sugar
1/2 cup Greek yogurt
zest and juice of 3 Meyer’s lemons
2 large eggs (room temp)

Lemon Curd glaze:
2 tbsp lemon juice
1 tbsp lemon curd
1 cup powdered sugar
1 tbsp milk
