Ingredients
	•	2 packs (3.5 oz each) ramen noodles
	•	½ lb thinly sliced beef
	•	½ tsp salt
	•	¼ tsp black pepper
	•	4 garlic cloves, minced
	•	1 red bell pepper, sliced
	•	4 oz snow peas

For the sauce:
	•	2 tbsp Thai red curry paste
	•	1 can coconut milk
	•	1½ cups water
	•	1 tsp Better Than Bouillon chicken base
	•	¼ cup peanut butter
	•	1 tbsp soy sauce
	•	Juice of ½ lime

For serving:
	•	2 soft boiled eggs
	•	Green onions, sliced
	•	Chili oil (optional)

Directions
	1.	Bring a pot of water to a boil. Carefully add the eggs and cook for 6–7 minutes.
Transfer to ice water, then peel and set aside.
	2.	Heat a skillet over medium-high heat. Add the thinly sliced beef and season with salt and black pepper.
Cook for about 3 minutes, until seared and cooked through. Remove from the pan.
	3.	In the same pan, add sliced bell pepper and snow peas. Season lightly with salt and cook for 3–4 minutes until slightly tender.
Remove and set aside.
	4.	In the same pan, add minced garlic and sauté briefly.
Add Thai red curry paste and cook for about 1 minute, until fragrant.
	5.	Pour in coconut milk and water. Stir in the Better Than Bouillon chicken base, peanut butter, and soy sauce.
Whisk until smooth and bring to a gentle simmer. Taste and adjust seasoning if needed.
	6.	Add ramen noodles directly into the broth. Let them soften, then gently break them apart.
Cook until tender and the broth becomes creamy and slightly thickened.
	7.	Divide the ramen into bowls. Top with cooked beef, vegetables, and soft boiled eggs. Garnish with green onions and drizzle with chili oil if desired.
