Ingredients (Serves 4 + leftovers)

Crockpot Chicken
	•	2 lbs chicken breast or thighs
	•	1 packet taco simmering sauce (8 oz)
	•	½ cup water
	•	1 small onion, diced
	•	1½ tsp garlic powder
	•	1½ tsp onion powder
	•	1 tsp paprika
	•	1 tsp salt
	•	½ tsp black pepper
	•	2 bay leaves

Rice
	•	1 cup dry white rice
	•	2 cups water
	•	pinch of salt

Charred Corn
	•	10 oz frozen corn
	•	1 tbsp oil
	•	½ tsp garlic powder
	•	½ tsp cumin
	•	½ tsp chili powder
	•	½ tsp salt

Black Beans
	•	1 (15 oz) can black beans, drained & rinsed
	•	1 tsp oil
	•	½ tsp garlic powder
	•	½ tsp onion powder
	•	salt to taste

Pico de Gallo
	•	3 Roma tomatoes, diced
	•	¼ onion, finely diced
	•	2–3 tbsp fresh cilantro, chopped
	•	juice of ½–1 lime
	•	salt to taste

Toppings
	•	shredded lettuce
	•	1 avocado, sliced
	•	sour cream
	•	shredded cheese
	•	fresh cilantro

Instructions

1. Add chicken to the crockpot. Pour in taco simmering sauce and ½ cup water.
Add diced onion, garlic powder, onion powder, paprika, salt, black pepper, and bay leaves.
Cook on LOW 4–5 hours or HIGH 2–3 hours.
Shred the chicken and mix it back into the sauce.

2. Cook rice with water and a pinch of salt until fluffy.

3. Heat oil in a skillet over medium-high heat. Add frozen corn and cook until slightly charred.
Add garlic powder, cumin, chili powder, and salt. Mix and remove from pan.

4. In the same skillet, add oil and black beans. Season with garlic powder, onion powder, and salt to taste. Heat through.

5. Make pico de gallo by mixing tomatoes, onion, cilantro, lime juice, and salt.

6. Add rice to each bowl, then top with shredded chicken, beans, corn, pico, lettuce, and avocado.
Finish with sour cream, cheese, and fresh cilantro.
