I always pushed back on the notion of getting a souse vide because I thought it took the fun away from cooking with live fire. After today, I gotta say, I’m a fan. You can scratch that itch by searing over a live fire. This secondcityprime Cowboy Ribeye went from frozen solid to perfectly seared in 3.5 hours!
