Outback Creamy Potato Soup
45ish minutes
Serves: 4 
Ingredients
Soup Base
4 large russet or golden potatoes, diced
2.5 cups (590 ml) chicken stock or broth
1 cup (240 ml) cold water
1/2 sweet yellow onion, diced (optional)
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Roux and cream
1/2 cup (115 g) unsalted butter
1/3 cup (43 g) all-purpose flour
3/4 cup (180 ml) heavy whipping cream
Toppings and Garnish
8 slices of bacon
3/4 cup (85 g) cheddar cheese, grated, plus extra for serving
1/4 cup (15 g) green onion, diced

Instructions
1. Peel and dice the potatoes into bite-sized pieces. Place them in a pot, cover with water, and bring to a boil. Simmer until potatoes are tender. Drain and set aside.
2. In a large pot, combine chicken stock, 1 cup cold water, diced sweet yellow onion (if using), salt, and black pepper. Bring to a gentle simmer over medium heat and cook for 20 minutes so flavors infuse.
3. In a separate saucepan, melt the butter over medium heat.
Gradually whisk in the flour to create a smooth paste. Allow the roux to cook for 2-3 minutes, stirring constantly to eliminate raw flour flavor.
4. Slowly whisk the roux into simmering broth, ensuring a smooth, lump-free texture. Stir continuously as the mixture thickens.
5. Pour in the heavy whipping cream while stirring gently. Simmer the soup for another 20 minutes, stirring occasionally.
6. Gently fold the cooked, diced potatoes into the thickened soup base. Stir well to distribute evenly and heat through.
7. Ladle soup into bowls. Top each serving with grated cheddar cheese, crumbled bacon, and diced green onions. Serve hot.
