Musakhan, a traditional Palestinian dish as old as time. It consists of fluffy taboon bread topped with juicy layers of caramelized onion, sumac, chicken, and olive oil. It is essentially my childhood. I hope you enjoy this recipe. And as we enjoy Palestinian cuisine, let us also draw attention to the struggles that Palestinians face. Currently, 36% of the Palestinian population live below the poverty line. Food insecurity rose from 9 to 23% in the West Bank and 50-53% in the Gaza Strip.
