Quick guandules guisados 🤤 you can blend all of the vegetables and add them back into the simmering pot, but for me, the auyama lends the perfect thick consistency that i like

2 tbsp cooking oil
1 smashed garlic clove
1/3 red onion
a piece of chicken bouillon cube
1 tbsp sofrito
recao / cilantro ancho
1 can drained & rinsed guandules
2 pieces auyama (pumpkin/calabaza)
2 cups water + more if it dries
cilantro
