My shredded chicken recipe is the filling for EVERYTHING! And this shredded chicken stays juicy, freezes beautifully, and makes weeknight dinners EASY! 

4 lbs chicken breast 
4 quarts of water
2 tbsp garlic powder 
2 tbsp adobo 
1 tbsp black pepper 
4 tbsp achiote oil (or your regular oil) 
2 chicken bouillon cubes 
1 yellow onion 
1 green bell pepper 
1 red bell pepper 
3 tbsp garlic paste 
4 tbsp sofrito 
3 tbsp tomato paste 
1 tbsp black pepper
1 tbsp onion powder 
1 cup fresh water plus

*freeze for up to 3 months, to reheat, thaw on counter and place in a pan on medium heat, or microwave thawed chicken for 3 minutes
