Broccoli Beef Recipe (Velveting Method)

A restaurant-style broccoli beef made tender with a light baking soda velvet and finished in a savory oyster-soy glaze.

Ingredients

For the Beef & Marinade

1 lb flank steak, thinly sliced against the grain
1/4 tsp baking soda
3 tbsp water
2 tbsp cornstarch
1 tbsp neutral oil
1 tbsp oyster sauce
1 tbsp soy sauce

For the Sauce

1 cup water or chicken stock
1 tsp sugar
2 tbsp soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce
1/2 tbsp sesame oil
1–2 tbsp cornstarch (to thicken)
Additional Ingredients

3 cloves garlic, minced
4–5 cups broccoli florets
Neutral oil, for cooking
Instructions

1) Prepare and Marinate the Beef (Velveting)

In a bowl, dissolve the baking soda in 3 tablespoons of water. Add sliced flank steak and toss to coat. Let rest for 10 minutes. Rinse the beef briefly under water to remove excess baking soda and pat dry. Add cornstarch, oil, oyster sauce, and soy sauce. Mix well and marinate for 15 minutes.

2) Make the Sauce

In a bowl, whisk together water (or stock), sugar, soy sauce, dark soy sauce, oyster sauce, sesame oil, and cornstarch. Set aside.

3) Blanch the Broccoli

Bring a pot of water to a boil. Blanch broccoli for 15 seconds until bright green and crisp-tender. Drain and set aside.

4) Cook the Beef

Heat a wok or large pan over medium-high heat. Drizzle in oil. Sear the marinated beef in a single layer for 1–2 minutes until just cooked. Remove from pan and set aside.

5) Build the Dish

Add a little more oil to the pan. Sauté garlic until fragrant (about 10 seconds). Pour in the sauce and bring to a boil, stirring until thickened. Add a splash of water if the sauce becomes too thick. Return the beef and broccoli to the pan. Toss everything together for 30–60 seconds until well coated and heated through.

Serve hot over steamed rice.
