EASY BUTTERNUT SQUASH SOUP ✨ So easy to make! 🥣 Follow @houtocook for more recipes!

Ingredients 
1 butternut squash 
2 cups milk
2 cups chicken broth
Salt / pepper
1 onion 
Drizzle of olive oil 
Toppings (optional): Drizzle heavy cream and crushed nuts 

Slice the butternut squash in half. Remove seeds and drizzle olive oil, salt and pepper on the squash. Roast in oven for 40 mins at 400F (or until soft). Once cooled, scoop out the squash and put in blender. Sautee and brown the sliced onions, let it cool and put in blender. Also add 1 cup milk and 1 cup chicken broth and blend. Pour blended mixture in a pot, and add rest of milk and chicken broth. Add or more less as desired, until you achieve the velvety consistency. Sprinkle some salt and pepper.
