## Caption

Our mofongo of the month is the Chuletón con Trifongo.... on this picture we are showcasing the vegan version.

 The trifongo is made of yuca (cassava), sweet & green plantain drizzled with a chipotle aioli, then crown it with a  fried chop made of seitan, we use blackbird_foods seitan, and we convert this into a vegan fried chop with an avocado wedge & finish it with our housemade chimichurri.
