## Caption

Simple Chicken Recipe without Marination
Ingredients:

Chicken (cut into pieces)
1 Onion (roasted on direct flame and then made into a paste)
1 Tomato
1 tbsp Red Chilli Powder
1 tbsp Ginger-Garlic Paste
1 tbsp Garam Masala
1-2 tbsp Chicken Gravy Masala
2-3 tbsp Curd (yogurt)
1 Lemon (juice)
Pandan Leaves (optional)
Salt (to taste)
Water (as needed)
Coriander for garnishing

Instructions:
Roast the Onion:
Place the onion directly on the flame and roast it until it becomes charred and soft. This will give it a smoky flavor.
Once roasted, peel off the skin and blend the onion into a smooth paste.

Cook the Chicken:
Heat oil in a pan, then fry the chicken pieces until they are lightly browned. Set aside.
In the same pan, add ginger-garlic paste and sauté for a minute or two until fragrant.
Add the Tomato-Onion Paste:

Add the roasted onion-tomato paste to the pan and cook it until the oil starts separating from the masala, stirring occasionally.

Add Spices:
Add red chili powder, garam masala, chicken gravy masala, and salt. Stir well to coat the paste and spices evenly. Cook for a few minutes until the spices bloom and the oil starts to release from the paste.

Add the Chicken:
Add the fried chicken pieces to the pan, mixing them well into the masala. Let the chicken absorb the flavors for a few minutes.

Add Yogurt and Lemon:
Lower the heat, and add the yogurt to the chicken mixture. Stir it in well so that the yogurt combines with the spices.
Squeeze fresh lemon juice into the curry and mix. This will give the dish a nice tangy kick.

Simmer:
Add water to adjust the consistency of the gravy (less water for a thicker curry, more for a thinner one).
If you have pandan leaves, you can drop them in at this point to enhance the aroma.
Let the curry simmer for 15-20 minutes (or until the chicken is fully cooked), stirring occasionally.

Final Touches:
Once the chicken is cooked and the gravy has thickened to your liking, taste and adjust seasoning if needed & garnish with coriander

Serve:
Serve the chicken gravy hot with rice, naan, or roti.
