4 slices of bread

Instructions:

Prepare the Potato Filling:
Mash the boiled potatoes in a bowl. Heat vegetable oil in a pan, then sauté chopped onions and capsicum until soft. Add the mashed potatoes to the pan. Season with oregano, black pepper, salt, and fresh coriander. Mix everything together and cook for 3-4 minutes, allowing the flavors to combine.

Assemble the Sandwich:
