This year Tết Lunar New Year is on Tuesday, 2/17/2026. One week away!

 Every year, I look forward to hosting my annual Tết Lunar New Year party with my friends to share my family’s traditions, food, and customs. The centerpiece of the celebration is always a large pot of hearty, tender Thịt Kho Trứng, a traditional Vietnamese dish of caramelized pork and eggs, surrounded by a variety of festive foods that are commonly enjoyed during Tết.

Thịt Kho Trứng is simple to prepare, deeply flavorful, and incredibly comforting, making it perfect for bringing everyone together. More than just a delicious meal, Thịt Kho Trứng carries rich symbolism and cultural meaning. It represents family, unity, and prosperity for the year ahead, creating a meaningful connection to tradition and making it an essential dish for Vietnamese families during Lunar New Year celebrations.

What are your favorite Lunar New Year eats?

Ingredients (Serves 4-6 people):
5 pounds pork belly and pork butt, cut into 2-inch chunks and parboiled
12 jumbo eggs, hard-boiled
4 cans Coco Rico Coconut Soda (or 6 cups coconut juice)
6 cups water
1 cup fish sauce, more to taste
1 tablespoon Thick Soy Sauce
2 shallots, washed and peeled
6 cloves of garlic, peeled

Steps:
Combine the parboiled pork chunks with fish sauce, thick soy sauce, garlic, and shallots. Marinate for at least 2 hours.
Heat a pot over high heat. Sear the marinated pork for 5 minutes.Pour in Coco Rico Coconut Soda (or coconut juice) and water, then bring the mixture to a boil. Reduce to medium-low, skim off any impurities from the surface, and let the pork simmer for at least 2 1/2 hours, or until the pork becomes tender.
While the pork is simmering, bring a pot of water to a boil and cook the eggs until they are hard-boiled (about 10 minutes). Once cooked, cool the eggs in ice water, peel them, and set aside. About halfway through the simmering process, gently add the peeled hard-boiled eggs to the pot.
