For @traegergrills #traegergameday Week 3 Tailgate Snack Week, it’s all about appetizers!

I made Smoked Lobster Roll Sliders with a Vietnamese twist. The secret ingredient? I added Shrimp Paste in Soya Bean Oil to give the lobster tôm kho tàu vibes and taste. 

To make the lobster rolls, I added seasonings to melted butter and oil and brushed them onto butterflied lobster meat. I smoked the lobster at 275 degrees until it reached 145 degrees. I then made the mayo mixture, chopped up the cooked lobster, and mixed it. 

Traditionally, mayo-based lobster rolls have lobster, parsley, and celery for crunch. For my Vietnamese-style lobster rolls, I added cilantro and cucumber for crunch. This fun and creative twist on lobster rolls turned out pretty tasty! I enjoyed it. 

Lobster Ingredients:
1.5-2 pounds lobster meat
4 tablespoons melted butter
1 tablespoon oil from Shrimp Paste in Soya Bean Oil
2 tablespoons SPG Seasoning
1 tablespoon Cajun Seasoning
1 teaspoon fresh lemon juice

Mayo Sauce Ingredients:
1/2 Cup mayonnaise
¼ cup Shrimp Paste in Soya Bean Oil
1 tablespoon fresh lemon juice
⅓ cucumber, finely chopped
2 tablespoons fresh cilantro
2 green onions, finely chopped
Salt and Pepper, to taste
