Sheet pan gnocchi dinners are kind of a big deal around here, and if you tried my ultra viral Greek Blue Zone baked gnocchi, you already know this one is gonna be BANGING.

This is your high-protein, high-fibre, throw-it-on-a-pan-and-go kinda dinner. Packed with chicken, TWO kinds of beans, and loads of veggies so you’re actually full and satisfied (not rummaging the pantry 2 hours later 😏).

Inspired by Blue Zone eating—aka meals that help people live to 100—this one is simple, nourishing, and totally customizable. How bad could that be?

Save this for later because I KNOW you’re gonna want it on repeat.

INGREDIENTS:

For the Greek dressing + chicken:

¼ cup extra-virgin olive oil, MY BRAND, JUIC
Zest + juice of 1 lemon
1 garlic clove, pressed
1 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp smoked paprika
1 1/2 tsp red wine vinegar
1 tsp @diamondcrystalsalt 
1/4 tsp pepper
1/4 tsp chili flakes
1/2 tsp garlic powder @spiceology
½ tsp onion powder @spiceology 
1 tbsp honey, MY BRAND, HUN-NEE
450–550 g chicken thighs
450 g gnocchi
1 can chickpeas, drained
1 can cannellini beans, drained
1 zucchini, chopped
1 yellow pepper, chopped
1 pint cherry tomatoes, halved
6 garlic cloves, smashed

Toppings:
Goat cheese, fresh herbs (parsley, dill, mint), AND pepperoncini.
