## Caption

Spring markets in Paris mean blood oranges, fresh herbs, and the creamiest burrata you can find.

So naturally I turned that into a salad that feels a little fancy but takes about 7 minutes to make.

It’s bright, citrusy, creamy, a little spicy from chili oil, and finished with pistachios and a heavy glug of olive oil (as all good things should be).

The real secret though is the shallot dressing that sits for a few minutes and softens into the most delicious little vinaigrette.
