Last Sunday, I finally dug up the giant burdock in my digestive garden. For reference, I called my dog into the frame so you could see just how far the leaves extended. But those paled in comparison to the roots—some over 3 feet long—anchoring so deeply that harvesting became a full-body workout. As seen above!
But the effort is always worth it. These roots have incredible medicinal value and a fascinating backstory.
In Japan, it’s called gobo and eaten as a crisp, earthy vegetable rich in inulin—a prebiotic fiber that feeds gut flora. In medieval Europe, burdock was used to ward off evil spirits and protect against curses—tucked into doorways or carried as a charm. In Traditional Chinese Medicine, the seeds are used to clear “wind-heat,” a pattern that shows up as sore throats, fevers, or red, inflamed skin.
Later in the summer, this plant will send up a tall stalk covered in burrs—the same ones that famously inspired Velcro, after a Swiss engineer noticed how stubbornly they clung to his dog’s fur.
Symbolically, burdock is known as a plant of persistence and protection—it attaches, it digs deep, and it stays with you.
That same stubbornness that makes it hard to harvest also makes it unforgettable: gritty, grounding, and tied to centuries of food, healing, and invention.
