Sweet dreams are made of *cheeeeeese* 🧀 

The side dish of the summer has arrived!! This calabrian chili burrata bruschetta is easily one of my favorite appetizers in the WORLD. Perfect for any and all end of summer BBQ’s and takes less than 30 minutes to make 🫶🏼

Ingredients

-10 oz of cherry tomatoes
-1 ball of burrata
-EVOO (thank you @wearebrightland !)
-4 large garlic cloves, minced
-2 tsp calabrian chili oil (I love @delallofoods )
-2 TB red wine vinegar
-1 garlic clove for the toast
-1 loaf of French bread or a sourdough loaf (I used my leftover sourdough bread bowls to make the toast, but you can use French bread instead!)
-salt & pepper to taste

Preheat over to 375*. Pour cherry tomatoes in a baking dish and add EVOO, minced garlic, Calabrian chili oil, red wine vinegar, salt and pepper. 

Add to oven and cook for 18-20 minutes or until tomatoes are soft/bursting. 

Slice bread and place on a baking tray. Drizzle olive oil on bread slices and cook for approximately 5-7 minutes. Flip over and repeat. Once bread is ready, season with salt. For extra flavor, rub a garlic clove on the slices of bread! 

Add burrata to cherry tomatoes and mix. Add to bread and ENJOY!
