Every time I show these you ask me what you should do with them and the answer is: only one thing and that one thing is scape pesto because there actually isn’t anything better in the whole world and it’s super easy. 

I only get one chance a year to make it and when I do, I made a huge batch with almost all my scapes and freeze it in little ice cube trays so I can just pop them out all winter long and never be without scapes. I’m never not looking forward to those curly green bits. 

Scapes are kind of a revelation because they’ve got that vibrant, fresh garlic flavor that’s not overpowering, and I make mine nut free for no reason other than pine nuts are actually absurdly priced and I’d rather spend that on more plants yknow? So sunflower seeds, which also add a little protein bonus yay, and then just some Parmesan or nutritional yeast if you’re dairy-free, good olive oil, and a pinch of salt. All things that make it creamy and a good pesto consistency, without weighing it down too much. It’s safe to say this stuff goes on everything in my house.

🧄Garlic scape pesto recipe🧄

Ingredients:
2 cups garlic scapes (chopped)
1 cup sunflower seeds
1 cup basil
1 cup parmesan (grated) or sub nutritional yeast
1 cup olive oil
3 tbsp lemon juice
Salt and pepper to taste

Instructions
Grate the parmesan. Add all the ingredients to the food processor and blend until smooth. Taste and adjust the seasoning to your liking. Transfer to jars and store in the fridge for up to two weeks or freeze individual portions in ice cube trays!
