Strawberry, Oat & Cinnamon Muffins 🍓

Soft, fruity muffins packed with fresh strawberries, oats and warm cinnamon. One of those simple bakes where you mix everything together, fill the muffin cases and let the oven do the rest.

I used FREE eggs for this recipe, which you can find in Tesco and on Ocado.

Ingredients

• 150g plain flour, plus extra for coating the chopped strawberries
• 40g rolled oats, plus 20g for sprinkling on top
• 1½ tsp ground cinnamon
• 1 tsp baking powder
• ½ tsp bicarbonate of soda
• ¼ tsp fine salt
• 80ml light olive oil or sunflower oil
• 80ml agave syrup
• 2 FREE eggs
• 220g plain Greek yoghurt
• 1 tsp vanilla extract
• 180g fresh strawberries, hulled and diced

Method

1.	Preheat the oven to 170°C fan. Line a cupcake tin with 10 muffin cases.

2.	In a large bowl add the flour, oats, cinnamon, baking powder, bicarbonate of soda and salt. Whisk together and set to one side.


3.	In another bowl whisk together the oil, agave syrup and eggs until smooth. Add the yoghurt and vanilla and whisk again until well combined.

4.	Hull and chop the strawberries into small pieces. Pat them dry with kitchen roll, then place in a bowl and coat with 1–2 tablespoons of flour until lightly covered. Set aside.


5.	Pour the wet ingredients into the dry ingredients and mix until just combined, then gently fold in the coated strawberries until evenly distributed.

6.	Divide the mixture evenly between the 10 muffin cases, then sprinkle the tops with the remaining oats.


7.	Bake for 30–33 minutes, or until the muffins are golden on top and a skewer inserted into the centre comes out clean.

8.	Leave the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.


9.	Enjoy.
