Nice little thin and crispy boi, using some exciting bits from my last trip to Italy. Gorgeous olive oil and oregano from Rialto market in Venice. 

Dough is petraflouruk 3. Id intended to cook with this just before we went away. But I had a massive power cut and had to freeze my dough. It's survived being very badly mistreated! 

250g dough balls 
65% hydration 
Stretched to 14" 
Cooked on a screen in cupponesince1963 #HE400
Plenty of milled tomato with a generous pinch of wild garlic salt from angelica.vanasse 
Dried oregano, thin sliced red onion and plenty of olive oil 
Baked and then finished with mozzarella, Parmesan and fresh basil.

If I just keep eating pizza then maybe I can trick myself into believing I'm still on holiday 😭
