Thumbprint Cookies! 

Well, they didn't turn out as I imagined 🤣💩

Ingredients

•	180g unsalted butter, softened
•	100g caster sugar
•	1 large egg yolk
•	2 tsp vanilla extract
•	250g plain flour
•	100g dark chocolate, chopped
•	60ml double cream

Method

1.	Line two baking trays with parchment paper.
2.	In a stand mixer or with a hand mixer, cream together the butter and sugar until light and fluffy.
3.	Add the egg yolk and vanilla extract, then mix until well combined.
4.	Gradually add the flour to the butter mixture, mixing gently until a dough forms.
5.	Roll the dough into small balls, about the size of a walnut. Place them on the prepared baking trays, spacing them about 5 cm apart.
6.	Press your thumb or the back of a teaspoon into the centre of each ball to create a small well.
7.	Place the trays in the fridge for 15–30 minutes. Meanwhile, preheat the oven to 160ºC.
8.	Bake the cookies for 10–12 minutes or until the edges are lightly golden.
9.	Remove from the oven and allow to cool on the trays for a few minutes before transferring to a wire rack to cool completely.
10.	To make the ganache, chop the chocolate and place it in a microwave-safe bowl. Pour the double cream over the chocolate.
11.	Microwave in 10-second bursts, stirring after each interval, until the chocolate is almost melted.
12.	Stir until the mixture is smooth and glossy, ensuring all the chocolate has melted.
13.	Allow the ganache to cool to room temperature, then refrigerate until it thickens to the consistency of chocolate spread.
14.	Once the cookies have completely cooled, pipe or spoon the ganache into the thumbprint wells of each cookie.
15.	The cookies can be served immediately or stored in an airtight container at room temperature for up to 3 days.
