Savoiardi biscuits (aka Ladyfingers)

These are great for Tiramisu of just to dip into your coffee ☕️

P.s. I would love to see everyone's recreation of my Tough Nut Tiramisu 😍

Ingredients:

•	110g plain flour
•	¼ tsp salt
•	3 large eggs, separated (room temperature)
•	110g granulated sugar
•	1 tsp vanilla extract
•	Caster sugar for dusting (optional)
•	Icing sugar for dusting (optional)

Method

1.	Preheat your oven to 180°C and line two baking sheets with parchment paper.
2.	In a bowl, sift together the plain flour and salt. Set it aside.
3.	In a mixing bowl, whisk the egg yolks, 55g of granulated sugar and vanilla until the mixture is pale, thick, and doubled it size.
4.	In a separate clean, dry bowl, whisk the egg whites until they start to form soft peaks. Gradually add the remaining 55g of granulated sugar while whisking, continue until stiff, glossy peaks form.
5.	Gently fold the whisked egg whites into the egg yolk mixture, being careful not to deflate the egg whites.
6.	Gradually fold the sifted dry ingredients into the egg mixture until well combined, but be gentle to keep the batter light and airy.
7.	Transfer the batter into a piping bag fitted with a round tip (about 1.5 cm in diameter, or cut the hole)
8.	Pipe the batter onto the prepared baking sheets in long, finger-shaped strips, leaving some space between each.
9.	Sprinkle each strip generously with caster sugar and dust the tops with icing sugar if desired.
10.	Bake in the oven for about 12-15 minutes or until the ladyfingers are golden and firm to the touch. (For best results, bake one tray at a time)
11.	Remove the ladyfingers from the oven and let them cool on a wire rack.
12.	Once they are completely cool, you can use them in your tiramisu or other desserts.
