Double chocolate chip cupcakes!

First bake of the year with Ronnie, and he wanted to make chocolate cupcakes 

I've been kicking myself over the audio on this footage. Halfway through, I decided to change from my phone mic to a shotgun mic as the rain was getting increasingly louder, I thought this would help. But it didn’t. We ended up sounding like we were really far away and underwater. I’ve done my best to try and sort out the audio 😢

For the cupcakes

•	175g plain flour
•	150g caster sugar
•	40g cocoa powder 
•	1 tsp bicarbonate of soda 
•	2 large free-range eggs
•	60ml milk
•	60ml vegetable oil
•	1 tsp vanilla extract 
•	50ml boiling water
•	50g white chocolate chips 
•	50g milk chocolate chips 

For the ganache 

•	100g dark chocolate 
•	10g butter (room temperature)
•	150ml double cream 
•	Chocolatey sprinkles for decoration 

Method:

1.	Preheat your oven to 180°C/160°C Fan/Gas 4 and line a cupcake tin with 12 paper cases.
2.	In a large bowl, combine the flour, sugar, cocoa powder, and bicarbonate of soda, whisking them together.
3.	Add the eggs, milk, oil, and vanilla extract to the dry ingredients, whisking until everything is well combined. Gradually incorporate the boiling water into the batter, mixing thoroughly. Note that the batter will be quite loose and runny.
4.	Fold in the chocolate chips until evenly distributed. 
5.	Divide the cake batter equally among the 12 cupcake cases, filling each about two-thirds full.
6.	Bake for approximately 18-20 minutes, or until a toothpick inserted into a cupcake comes out clean.
7.	Once baked, let the cupcakes cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
8.	For the ganache, finely chop the dark chocolate and place into a glass bowl with the butter.
9.	Heat the double cream over medium heat until it’s hot but not boiling. Pour it over the dark chocolate and butter and let it sit for 5 minutes.
10.	Stir the mixture until smooth and glossy. Allow the ganache to cool and thicken.
11.	Spread each cupcake with the cooled ganache and top with chocolatey sprinkles
