Lotus Biscoff brownies 😋 
 
@ronnie.bakes really wanted to make brownies again, so we had to @lotusbiscoffuk ones 

Ingredients 

•	375g Unsalted butter 
•	400g Dark chocolate (chopped)
•	6 Large eggs
•	350g Light brown sugar 
•	225g Plain flour 
•	200g White chocolate (chopped)
•	200g Lotus Biscoff biscuits (chopped)
•	150g Lotus Biscoff spread (warmed)
•	12 Round Lotus Biscoff filled biscuits 

Method 

1. Preheat the oven to 180°C/160°C fan/Gas 4.
2. In a medium saucepan, melt the butter over low heat.
3. Chop the dark chocolate and stir it into the warm melted butter. Mix well and leave to cool slightly.
4. Tap, tap, tap, and crack the eggs into a medium bowl. Add the sugar and whisk together until smooth.
5. While whisking, pour in the chocolate butter mixture and whisk until fully incorporated and smooth.
6. Fold in the flour, followed by the white chocolate and chopped Lotus Biscoff biscuits.
7. Pour half of the mixture into a rectangular brownie tin lined with parchment paper.
8. Drizzle about 75g of Lotus Biscoff spread over the top in a spiral pattern.
9. Pour the remaining brownie mixture on top and repeat step 8.
10. Place 12 round Lotus Biscoff biscuits on top of the mixture.
11. Bake in the middle of the oven for 35 minutes.
12. Remove from the oven and let it cool. For best results, allow them to cool overnight before cutting into the desired size.
